Cacio e Pepe Zucchini

This yummy side dish mimics the flavors of the popular Italian pasta dish, Cacio e Pepe. It features salty Pecorino and spicy cracked black pepper, which really elevates the zucchini.

Ingredients

  • 6 zucchini rinsed and cut into 3-4” sticks
  • ¼ cup of Pecorino
  • ½ teaspoon cracked black pepper
  • ¼ teaspoon lemon zest
  • 2 tablespoons olive oil
  • crushed hot pepper

Instructions

  • Preheat the oven to 400 degrees.
  • On a baking sheet, spread out the zucchini, and add the Pecorino, pepper, lemon zest, olive oil, and as much or as little hot pepper as you'd like.
  • Combine all together to make sure every piece is coated. Cook in the oven for about 25 minutes. You want the zucchini to still keep their shape but get a little crispy.
  • Garnish with some more Pecorino and fresh parsley. Enjoy!
