Cacio e Pepe Zucchini
This yummy side dish mimics the flavors of the popular Italian pasta dish, Cacio e Pepe. It features salty Pecorino and spicy cracked black pepper, which really elevates the zucchini.

- 6 zucchini rinsed and cut into 3-4” sticks
- ¼ cup of Pecorino
- ½ teaspoon cracked black pepper
- ¼ teaspoon lemon zest
- 2 tablespoons olive oil
- crushed hot pepper
Preheat the oven to 400 degrees.
On a baking sheet, spread out the zucchini, and add the Pecorino, pepper, lemon zest, olive oil, and as much or as little hot pepper as you'd like.
Combine all together to make sure every piece is coated. Cook in the oven for about 25 minutes. You want the zucchini to still keep their shape but get a little crispy.
Garnish with some more Pecorino and fresh parsley. Enjoy!
