Cacio e Pepe Zucchini
This yummy side dish mimics the flavors of the popular Italian pasta dish, Cacio e Pepe. It features salty Pecorino and spicy cracked black pepper, which really elevates the zucchini.

Ingredients
- 6 zucchini rinsed and cut into 3-4” sticks
- ¼ cup of Pecorino
- ½ teaspoon cracked black pepper
- ¼ teaspoon lemon zest
- 2 tablespoons olive oil
- crushed hot pepper
Instructions
- Preheat the oven to 400 degrees.
- On a baking sheet, spread out the zucchini, and add the Pecorino, pepper, lemon zest, olive oil, and as much or as little hot pepper as you'd like.
- Combine all together to make sure every piece is coated. Cook in the oven for about 25 minutes. You want the zucchini to still keep their shape but get a little crispy.
- Garnish with some more Pecorino and fresh parsley. Enjoy!
