Pork on pork. What could be better?!
I really like pork. It’s a quick, easy, and cheap dinner that you can really transform into so many things. Pork tenderloin is something I always have in my freezer. I find different things to stuff it with (whatever I have in my fridge) or make it with different pan sauces.
This time around I bought a pork loin, thinking I would do something similar. When I went to make it, I had an idea to wrap it in bacon because….. well isn’t everything better wrapped in bacon?!
Simplicity is key.
You don’t need a lot of crazy ingredients to make a good meal. You don’t need things that you can only find in a specialty market. This pork has six ingredients: pork, bacon, thyme, rosemary, salt, and pepper. You start by combining your salt, pepper, and finely chopped herbs in a bowl, and then rubbing all over the pork.

Depending on how big your piece of pork is, you may or may not need the whole package of bacon. You want to lay the bacon out on your cutting board or baking sheet (or “bacon sheet” HA), slightly overlapping:

One of my favorite ways to cook pretty much ANYTHING, is using my tried & true cast iron as well as the oven. I sear this piece of pork first and then finish it in the oven. It ensures the crispiness of the bacon, and it leaves the inside juicy and moist. When it’s finished cooking, let it sit a few minutes for slicing into it. I’m telling you – it’s such a simple recipe, but will wow your family or guests!
Bacon Wrapped Pork
Equipment
- Kitchen twine – 3 or 4 pieces cut into 6” length
Ingredients
- 1 ½- 2 lb boneless pork loin
- 1 package of bacon
- 1 tablespoon of salt
- ½ tablespoon of pepper
- 1 teaspoon of fresh rosemary finely chopped
- 1 teaspoon of fresh thyme finely chopped
- 1 tablespoons of olive oil
Instructions
- Preheat your oven to 375 degrees.
- Lay your bacon horizontally on a cutting board, each strip slightly overlapping each other. You may not need the whole package, it will depend how long your piece of pork is. You want to make sure it will fully cover the meat.
- Add the salt, pepper, rosemary and thyme into a small bowl, combining. Evenly distribute over the pork, making sure every inch is fully seasoned.
- When ready, lay your pork on the left edge of your “bacon sheet”. Slowly, start rolling your pork left to right, making sure you’re fully covering the pork. Once it’s fully rolled, if you have kitchen twine, tie about 3 or 4 pieces, evenly spaced out, to make sure the bacon doesn’t curl up while it cooks. (I’ve made this without the twine, so it’s doable even if you don’t have it!)
- Using a cast iron or oven-safe pan, pour your olive oil and set to medium heat. When the oil is hot, carefully sear the pork on all sides, so it gets that beautiful brown color. Once all sides are seared, transfer to the oven, and cook for about 25-30 minutes or until the inside reads between 145 and 150 degrees. Timing will vary depending on how big the pork is.
- When your meat has come to temperature, remove from the oven and let it sit for a few minutes before slicing and serving. Enjoy!
