Preheat your oven to 375 degrees.
Lay your bacon horizontally on a cutting board, each strip slightly overlapping each other. You may not need the whole package, it will depend how long your piece of pork is. You want to make sure it will fully cover the meat.
Add the salt, pepper, rosemary and thyme into a small bowl, combining. Evenly distribute over the pork, making sure every inch is fully seasoned.
When ready, lay your pork on the left edge of your “bacon sheet”. Slowly, start rolling your pork left to right, making sure you’re fully covering the pork. Once it’s fully rolled, if you have kitchen twine, tie about 3 or 4 pieces, evenly spaced out, to make sure the bacon doesn’t curl up while it cooks. (I’ve made this without the twine, so it’s doable even if you don’t have it!)
Using a cast iron or oven-safe pan, pour your olive oil and set to medium heat. When the oil is hot, carefully sear the pork on all sides, so it gets that beautiful brown color. Once all sides are seared, transfer to the oven, and cook for about 25-30 minutes or until the inside reads between 145 and 150 degrees. Timing will vary depending on how big the pork is.
When your meat has come to temperature, remove from the oven and let it sit for a few minutes before slicing and serving. Enjoy!
